Platter Natter
We will be living off the grid when we start up in Mozambique because there is very little infrastructure in the area. No water or sanitation systems and getting electricity to the property will take a while, so some adapting and compromising is important.
A refrigerator is considered a luxury and the closest supermarket can be over 20 miles (33Km) away. Knowing how to ferment, pickle and preserve various foods goes a long way when you have to get by without a freezer. Naturally fermented and pickled foods also has health benefits.
It is also good to know what substitutes one can use in your favourite recipes, like when there is no fresh cream to be found for miles. We have compiled a list of our favourite recipes and learnt how to make them for when we are away from home, which we will turn into a book, with the alternatives/substitutes we use for the closest match in a pinch.
Our finger snacks and deserts platters have become popular at small events and parties which have lead to the occasional request for platters for board meetings and slowly turning into a way to help fund building the training centre.
